Wild Honey Creamery makes small-batch craft ice cream in downtown Longview — a cow's-milk base, egg-free, sugar-sweetened, running 14 to 18 percent milk fat. Sarah Ward started making ice cream in 2017 with a countertop restaurant freezer. In 2019 she connected with dessert maker Macy Bannert after a Facebook comment, the two teamed up, and the creamery hit the scene as a traveling cart before opening a brick-and-mortar shop a year later. Bannert is listed on the site as CEO and Magical Chef.
The creamery sources ingredients as close to East Texas as it can. Eight staple flavors include sweet cream, butter pecan caramel crunch, churro, dark chocolate salted caramel and an iced latte flavor made with locally brewed Silver Grizzly coffee, alongside eight rotating seasonals — over 100 flavors created since opening. Flights come as six two-ounce scoops with cone chips, and there are sundaes, shakes and floats made with Dublin Soda or Topo Chico. Gluten-free cone chips are available on request, a vegan oat-milk option is on the staple list, and a full allergen table is published. The ice cream cart still goes out for events, and the shop can be reserved for private parties.
