Ruby's Mexican Restaurant

Ruby's Mexican Restaurant is a family-owned Mexican restaurant that opened its Longview location at 401 S. High St. in December 2025. It is part of a small East Texas group of Ruby's restaurants, and the Longview store was the family's first in the city. The restaurant serves a full Mexican menu and is generally open seven days a week for lunch and dinner. The building previously housed another restaurant and was remodeled ahead of the opening.
